This is the first time that I am sharing a soup recipe with you all. And what could be better than sharing my absolute favourite soup recipe which is the manchow soup? I learnt this recipe when I was just twelve years old and since then it has become my absolute favourite. If you dislike any of the vegetables, you can skip those. But each of these veggies adds a unique taste to the soup so try keeping them all. Also, you can skip the cornflour if you prefer clear soup.
So without any further blabbering let’s get started with the recipe.

Ingredients:
- Cabbage- ¼ cup (shredded)
- Carrot- ¼ cup (grated)
- Mushrooms- 1/3 cup (chopped)
- French beans- ¼ cup (chopped)
- Capsicum- ¼ cup (finely chopped)
- Spring onions- ¼ cup(chopped)
- Ginger- 1 tsp. (finely chopped)
- Garlic- 1 tsp. (finely chopped)
- Red or green chilli- 1-2 (finely chopped)
- Rice vinegar- ½ tsp.
- Soy sauce- 2 tsp.
- Black pepper- ¼ tsp.
- Water- 3 cups
- Corn starch- 6 tsp. + 2 tbsp. water
- Coriander leaves- 2 tsp. (finely chopped)
- Oil- 1 tbsp.
- Salt- as per taste
- Fried noodles- for garnishing
Procedure:
-  Heat oil in a kadhai or pot. Add the chopped chillies, ginger and garlic. Sauté the trio for a minute.
- Â Now add the chopped onion and cook for a minute.
- Â Add the chopped mushrooms and French beans.
-  Sauté on a medium-high heat until the mushrooms start changing colour.
- Â Now add shredded cabbage, grated carrot and chopped capsicum.
-  sauté the vegetables on high heat for 3-4 minutes. Add the black pepper and the soy sauce. Mix well.
- Â Add the water and salt. Mix well and allow the soup to come to a boil.
- Â In a small bowl combine the cornstarch with water and make a smooth paste. Pour this corn starch paste in the manchow soup and stir really well until it is incorporated nicely.
- Â Simmer the manchow soup further and allow it to thicken.
- Â Add the rice vinegar and check for the seasoning. Turn off the flame.
- Â Serve the veg manchow soup hot garnished with coriander leaves and fried noodles.
