Spring rolls are the perfect appetizer for your Diwali party. Everyone loves Chinese and fried food, making this one a sure shot hit. You can prepare all the rolls in advance and just fry them when the guests arrive. Serve this flavourful snack to your guest and they are sure to love it. Here is a step by step recipe of the same.

Ingredients:
Cabbage- 150 grams (shredded)
Carrot- 80 grams (shredded)
Capsicum- 1, medium (thinly sliced)
French beans- 7-8 (thinly sliced)
Spring onion whites- 2-3 (chopped)
Crushed black pepper- ½ tsp.
Noodles- 1 cup (cooked)
Soy sauce- 1 tbsp.
Spring onion green- 2-3, chopped
Salt- as per taste
Oil for cooking
Corn flour- 6 tbsp.
Water- 4-5 tbsp.
Spring roll sheets- 25-30
Procedure:
1. Heat 2 tbsp. oil in a kadhai and add the chopped spring onion whites. Cook sauté the onions on a medium flame for a few seconds.
2. Now add all the chopped vegetables. Turn the flame to high and sauté the vegetables on a high flame for 4-5 minutes.
3. Add the crushed black pepper and the soy sauce. Mix everything well.
4. Add the cooked noodles and salt. Mix again.
5. Make sure the filling is not water. It must be dry.
6. Add the spring onion greens and turn off the flame.
7. Mix and keep the filling aside.
8. In a small bowl add the 6 tbsp. corn flour and 4-5 tbsp. water to make a thick paste.
9. Now take a spring roll sheet and place it on the assembling station. Apply the sealing paste (cornflour and water) on the edges of the sheet.
10. Place a log of the filling on one side of the spring roll sheet.

11. Pull the sides of the sheet inside first and then roll it like a log till the end.

12. Prepare all the spring rolls in a similar manner.
13. Heat oil in a kadhai or pan for deep frying the spring rolls. Make sure that the oil is not too hot or the spring rolls will get burned.
14. Fry the spring roll on one side until light golden in colour. Flip them and cook until golden and crisp.
15. Remove the roll from the oil and drain on a kitchen paper towel.
16. Serve the veg. spring rolls with ketchup and chili garlic sauce.
