Easy-To-Cook Recipe For Mango Chutney With Bengali Tadka

Mango chutney is famous amongst the Bengalis and they prefer to eat it as an after-meal delicacy. With many ways to cook this simple chutney, but the main ingredient remains the same, raw/green mangoes.

In this recipe, you will learn to cook a mouth-watering dish that you can enjoy even with a plain roti. Follow the instructions properly without skipping any step.

COOKING TIME: 15 MINUTES
SERVES: 4
INGREDIENTS:

• 2 medium-sized Raw Mangoes, peeled and diced into cubes
• A pinch of Salt
• 1 cup of Sugar
• ½ teaspoon of Turmeric Powder
• ½ teaspoon of Black Mustard Seeds
• 1 whole Dry Red Chilli
• 1 ½ tablespoon of Mustard Oil
• 1 tablespoon of roasted Cumin Powder
• 1 cup of Water
• 1 tablespoon of Raisins
• 1 tablespoon of Cashews

HOW TO PREPARE:

1. First, take a deep bottom pan or a kadhai and put it on medium-high flame.
2. Now pour the oil in it and then let it heat.
3. Next, add dry chili and mustard seeds into the heated oil and wait for the seeds to splutter.
4. Now add the mangoes and lower the flame. Stir the ingredients well. Add salt and turmeric powder and mix well.
5. Then, cover with a lid and let it cook on simmer.
6. After 5 minutes or until the mangoes get a little tender, add the ¼ cup of sugar into the pan and water. Let it boil it on medium flame.
7. Turn the heat low and add the rest of the sugar, raisins and cashews and stir well.
8. Check the consistency and the sweetness and adjust as per your requirement.
9. Sprinkle some roasted cumin powder and serve with anything you want.
