Ingredients:

  • Whole wheat flour/atta- 1 ½ cup
  • Ghee- 2/3 cup
  • Sugar- ¾ cup
  • Water- 3 cups
  • Almonds- 10-12 (chopped)

Procedure:

  1.  In a kadhai or pan, heat the ghee.
  2.  In another pan combine the sugar and water and heat it until the sugar is dissolved completely. Bring the solution to a boil and let it simmer for some time. (Keep it on the flame while you are cooking the flour)
  3.  Once the ghee is hot add the whole wheat flour and almonds to it and mix the two together. Fry the flour while continuously stirring it. The stirring will ensure that the flour does not get burned and get cooked evenly.
  4.  When the flour has attained a deep/golden colour, is smelling nutty and has released the ghee it means it is time to add the sugar syrup.
  5.  Turn the heat on high under the sugar syrup. When the syrup starts to bubble, pick up the pan and add the syrup to the cooked flour. Be very careful while doing this as the sugar syrup is extremely hot and when you pour in the syrup it will splatter.
  6.  Stir the mixture continuously with all your strength so that there are no lumps. Soon the halwa will thicken and will absorb all the water.
  7.  When the halwa has thickened and the water has been absorbed properly, turn off the flame.
  8.  Serve the atta halwa hot.
