Baisakhi Special: How To Make Delicious Vegetable Paneer Tikka Masala

There is no end to the list of festivals that are celebrated in our nation, with complete joy and pomp for each festival. No matter which community or religion it belongs to, each festivity has its own craze and bliss.

Now that we are talking about festivals, how can we forget about Baisakhi, which is celebrated on 13th or 14th April of every year, to mark the beginning of the Sikh New Year. This day is celebrated with fun and happiness to commemorate the leadership of Guru Gobind Singh.

On this day, Punjabis make various Punjabi cuisines, from savory dishes to sweet desserts. And In this article, we will tell you how to prepare amazingly delicious vegetable paneer tikka masala.

PREPARATION TIME: 1 HOUR
COOKING TIME: 30 MINUTES
SERVES: 4
INGREDIENTS:
For Paneer Tikka:

• 500 grams of Cottage Cheese (Paneer), diced into cubes
• 1 cup of colorful Bell Peppers, diced
• 1 ½ teaspoons of Ginger-Garlic Paste
• 4 tablespoons of Oil
• 1 large-sized finely chopped Onion
• ½ cup of thick Curd
• 1 tablespoon of Butter
• ½ teaspoon of Lime Juice
• ½ teaspoon of Cumin Powder
• ½ teaspoon of Coriander Powder
• 2 tablespoons of Kashmiri Red Chili Powder
• ½ teaspoon of Garam Masala Powder
• ½ teaspoon of Kasuri Methi
• ½ teaspoon of Chaat Masala Powder
• ¼ teaspoon of Turmeric Powder
• Salt as per taste
For The Gravy:

• 2 medium-sized finely chopped Onions
• 1 Cardamom Seeds
• 3 medium-sized finely chopped Tomatoes
• 1 Dry Red Chili
• 1 teaspoon of Ginger -Garlic Paste
• 10 Cashews
• 3 tablespoons of full-fat Yogurt
• ½ teaspoon of crushed Kasuri Methi
• ½ teaspoon of Red Chili Powder
• ¼ teaspoon of Turmeric Powder
• ¼ cup of Fresh Cream
• 1 ½ tablespoons of Butter
• 1 ½ tablespoons of Sugar
• Salt as per the requirement
• Water as per the requirement
• Fresh Coriander Leaves for garnishing
HOW TO PREPARE:
For Paneer Tikka:

1. Take a large bowl and put ginger-garlic paste, oil, salt, lime juice, thick yogurt and all the remaining spices in it. Mix it all well.
2. Now add paneer cubes and chopped onion & bell peppers into the mixture. Mix well to coat all the mixture on the vegetables well.
3. Now keep this mixture to marinate overnight.
4. Take out the marinated mixture and line up the paneer, bell peppers and onions on the skewers. Grill them for 7-8 minutes or until they turn light golden brown from all the sides.
5. Set aside until the gravy is prepared.

For The Gravy:

1. Take a deep-frying pan and add butter into it, on a high flame.
2. Now, add ginger -garlic paste, cashew nuts and cardamom seeds into the melted butter and sauté it for one minute.
3. Then, add the chopped onions and fry until they turn golden brown.
4. Next, add salt and tomatoes, and cook until they separate the oil.
5. Now, add turmeric powder, red chili powder, garam masala & sugar and stir well.
6. Then, cool the mixture and blend it into a blender to form a puree.
7. Now, transfer the pureed mixture into the pan again and let it cook on high flame.
8. Add kasuri methi into the cooked puree and bring it to a boil. Add water as per the required consistency and bring the gravy to boil again.
9. At last, add the prepared paneer tikkas into the gravy and stir again. Cook it for a while and then add fresh cream into the dish.
10. Now transfer the cooked dish into the bowl and garnish with fresh coriander leaves.
