Batata Vada Recipe

This one is straight from the streets of Maharashtra. Batata Vada is a very famous and beloved street food item of Maharashtra. It is made of spiced potato mash covered with this gram flour batter and then deep fried till golden perfection. It served on its own with different chutney or with a pav as vada pav. It tastes amazing either way. The recipe is also fairly easy to make and once you try them they may even take the place of your usual pakoras.

So without any further due let’s get started with the recipe.

Ingredients:

  • Potato- 4, medium sized (boiled)
  • Curry leaves- 10-12
  • Skinned split urad dal- 2 tsp.
  • Mustard seeds/rai- 1 tsp.
  • Cumin seeds/jeera- 1 tsp.
  • Green chilli- 1 (finely chopped)
  • Ginger- 1 tbsp. (finely chopped)
  • Turmeric- 1 tsp.
  • Asafoetida- ¼ tsp.
  • Coriander leaves- 1 tbsp. (chopped)
  • Oil- for deep frying
  • Salt- as per taste
  • For the batter:
  • Gram flour/besan- 1 ½ cup
  • Turmeric powder/haldi- 1 tsp.
  • Water- 1 cup
  • Salt- ½ tsp. (for seasoning the batter)

Procedure:

  1.  Peel and mash the boiled potatoes in a bowl. Make sure that there are no lumps.
  2.  In a pan, heat some oil and add mustard seeds and urad dal to it. Let the mustard seeds crackle and the urad dal gets roasted.
  3.  Now add the cumin seeds, curry leaves, chilli, ginger and asafoetida. Cook for a few seconds.
  4.  Add the turmeric powder and mix.
  5.  Pour over this hot spiced oil over the mashed potatoes. Add salt and chopped coriander. Mix it very well first with a spoon and then with your hands.
  6.  Now take a small amount of mixture in your hands, make a ball of it and then flatten it slightly. Prepare all the vadas in a similar manner and keep aside.
  7.  In another bowl prepare the batter by combining the gram flour, turmeric powder, salt and water. Mix well so that there are no lumps and the batter is on the thicker side.
  8.  Heat oil in a kadhai for deep frying. When the oil is hot enough, dip the potato discs in the batter so that they are well coated from all the sides and then fry them in the hot oil. Cook on a medium flame on one side until golden and crisp and then carefully flip over and cook on the other side as well.
  9.  Remove the vadas on a paper towel to drain the excess oil.
  10.  Serve the vadas hot with green chutney, ketchup or your favourite dip. You can also serve them with pav or bread too.
