Chicken Korma Recipe

Chicken korma is one of the most basic chicken recipes hailing from the northern India. It is a fragrant, yogurt (and sometimes cashew paste) based gravy made with whole as well as powdered spices. This is one of the easiest and quickest chicken gravy recipes which you can prepare in less than an hour. If you have never had it, then here is a step by step recipe of the same.

Ingredients:

  • Chicken- ½ kg
  • Oil- 3-4 tbsp.
  • Clarified butter/ghee- 2-3 tbsp.
  • Cumin/jeera- 2 tsp.
  • Cardamom- 4-5
  • Cloves- 6-7
  • Garlic- 2 tbsp. (chopped)
  • Coriander powder- 1 tbsp.
  • Red chilli powder- 1 tbsp.
  • Salt to taste
  • Ginger paste- 1 tsp.
  • Yogurt- 1 cup
  • Onions- 2 (thinly sliced and fried)
  • Garam masala- 1 tsp.
  • Saffron- a pinch (soaked in water)

Procedure:

  1.  In a pan or kadhai, heat the oil as well as the ghee. Now add the cardamom, garlic and cloves. Sauté them for a minute or two.
  2.  Add the chicken to the kadhai and cook it while stirring it continuously. Once the chicken has browned a little add the coriander, red chilli powder and salt. Mix well.
  3.  Now add the ginger paste, yogurt and fried onions to the chicken and mix again. Cook for 1-2 minutes.
  4.  Now add the garam masala and saffron.
  5.  Add just a little bit of water to the chicken. Now cover and cook the chicken on a low flame for 12-15 minutes.
  6.  Stir the chicken occasionally.
  7.  Serve the chicken korma hot with roti, naan or rice.
