Dahi aloo is one curry that I have grown up eating. This one is very popular in my home and it is the go-to recipe of my mom on days she can’t figure out what to make. This recipe is very easy to prepare. You can easily find all the ingredients in your kitchen itself all the time. So you don’t really have to go out and gather the ingredients before making this. It goes really well with almost anything and everything. Serve it with roti, puri or rice, it compliments each one of them amazingly. Here is a step by step recipe of the same.

Ingredients:
- For the curd mixture:
- Curd- 1 cup (fresh)
- Gram flour/besan- 2 tbsp.
- Water- 1 ½ cup
- Other ingredients:
- Potatoes- 3, medium potatoes (boiled and crumbled)
- Oil- 2 tbsp.
- Cumin/jeera- ½ tsp.
- Onion- 1, medium (finely chopped)
- Tomato- 1, large (chopped)
- Green chilli- 1-2 (finely chopped)
- Garlic- 3-4 cloves (finely chopped)
- Ginger- ½ inch piece (finely chopped)
- Curry leaves- 7-8
- Turmeric/haldi powder- ¼ tsp.
- Red chilli powder- ¼ tsp.
- Coriander powder- ½ tsp.
- Garam masala- ½ tsp.
- Asafoetida- a pinch
- Salt- as per taste
Procedure:
- Â Transfer the curd to a big bowl and whisk it until it is smooth.
- Â Add the gram flour and mix until there are no lumps.
- Â Add the water and mix again.
- Â Heat oil in a pan and add the cumin seeds. Roast the cumin seeds until toasty.
- Â Add the chopped onion and cook until translucent in colour.
-  Now add the chopped the chopped ginger, garlic and green chilli and sauté until the raw aroma fades away.
-  Add the curry leaves and sauté for half a minute.
- Â Add the chopped tomatoes. Cook the masala until the tomatoes are soft and start leaving oil on the sides.
- Â Add the red chilli powder, turmeric powder, coriander powder and mix really well.
-  Add the potatoes and mix really well. Sauté the potatoes for 2-3 minutes.
- Â Turn the flame to low and slowly pour in the curd mixture. Quickly stir the mixture with all the other ingredients so as to prevent curdling.
- Â Add salt and cook the gravy on a low flame 8-10 minutes.
- Â You can adjust the thickness of the gravy by adding more water.
- Â add the garam masala and the chopped coriander leaves.
- Â Turn off the flame.
- Â Serve the dahi aloo with chapatti, paratha, puri, luchi or steamed rice.
