Diwali Special- Ragda Patties Recipe

If you are a little confused, then let me tell you that ragda patties and the aloo ki tikki is one and the same thing. In Maharashtra is it known as ragda patties and in the northern states as aloo ki tikki. It is a very famous snack item which includes fried potato patties smothered in yogurt, chutney and a mix of spices. This could make a great snack item for your Diwali party or get together. Here is a step by step recipe of the same.

Ingredients:

For the patties:

  • Potatoes- 4
  • Cornflour- 3 tbsp.
  • Red chili powder- ½ tsp.
  • Salt- as per taste
  • Ghee/oil- for cooking

Other ingredients:

  • White peas- 1 ¼ cup
  • Mint coriander chutney- ½ cup
  • Sweet tamarind chutney- ½ cup
  • Yogurt- ½ cup
  • Coriander leaves- ½ cup (Chopped)
  • Fine sev- 1 cup
  • Chaat masala- as per requirement
  • Red chili powder- as per requirement
  • Black salt- as per requirement
  • Cumin powder- as per requirement

Procedure:

    1.  Soak the white peas overnight. The next day, drain the excess water and cook them in the pressure cooker with 5 cups  of  water, some salt and turmeric until soft. This will take about 15-18 minutes on a medium to high flame.
    2.  Remove from the pressure cooker and transfer to a bowl.
    3.  Wash the potatoes and boil them in a pressure cooker until they are soft.
    4.  Peel the potatoes while they are still warm. mash the potatoes with a potato masher and add the cornflour, red chili  powder and salt to it. Mix really well.
    5.  Check for the seasoning and add more if required. If the mixture is a little loose you can add more cornflour to the  mixture.
    6.  Divide the mixture into medium sized balls and flatten them to form patties. Keep the patties aside.
    7.  Heat oil/ghee in a pan. Place the patties in the hot oil and allow them to cook. Let the patties turn light golden in colour  and then flip them. cook on the other side in a similar manner. Keep the cooked patties aside
    8.  Put everything out in different bowls and then you can start the assembling.
    9.  Before serving the ragda patties we need to cook the partially cooked patties.
    10.  Heat some more oil/ghee in the pan. Flatten the patties lightly with a spatula and cook the patties in the oil on a medium  flame. Cook the patties from both the sides until crisp and golden brown on both the sides.
    11.  Warm up the white peas or the ragda.
    12.  In individual plates/bowls place the potato patty and pour a ladle full of ragda on it.
    13.  Add the green chutney and the tamarind chutney.
    14.  Pour some yogurt/curd.
    15.  Sprinkle cumin powder, chaat masala, red chili powder, black salt and chopped coriander leaves.
    16.  Top it off with fine sev and serve immediately.
