Egg Bhurji (Scrambled Egg) Sandwich Recipe

The recipe that I am going to share with you today is one of the easiest and the quickest recipe that you can easily prepare on a busy weekday for breakfast. The egg bhurji/scrambled egg sandwich is one of my favourites, as it literally takes only a few minutes to prepare. You can also modify the recipe according to your choice by adding more vegetables or cheese to it. Here is a step by step recipe of the same.

Ingredients:

  • Eggs- 2-3
  • Pav- 2-3
  • Onion- 1, medium (sliced)
  • Carrot- 1, medium (grated)
  • Tomato- 1, medium (Chopped)
  • Oil- 1 tbsp.
  • Cumin/jeera- ¼ tsp.
  • Grated ginger- 1 tsp.
  • Red chilli powder- 1/8 tsp.
  • Green chilli- 1 (chopped)
  • Black pepper powder- a big pinch
  • Turmeric- a pinch
  • Salt- as per taste

Procedure:

  1.  Slice the pav from the middle so that the slices are joined at one side.
  2.  Toast the pav on a pan and keep aside.
  3.  Now heat oil in the same pan. Add the cumin and toast it a bit, add the sliced onion and cook until translucent.
  4.  Add the grated ginger and green chilli. Sauté for a few seconds.
  5.  Add the tomato and cook until it is mushy and completely cooked. This will take about 5-7 minutes on a high flame.
  6.  Add the carrot along with all the spice powders and salt.
  7.  Mix all the ingredients really well.
  8.  Crack the eggs and add to the pan. Scramble the eggs with the prepared masala and cook them on a medium flame until just cooked.
  9.  Turn off the flame.
  10.  Fill the pav with the prepared egg bhurji.
  11.  Serve the egg bhurji sandwich hot.
