Khatta Dhokla is a Gujarati snack. So if you’re a Gujarati or just love Gujarati cuisines, you can make this snack easily at home. It is very light and easy to make with a little sour taste. This Dhokla takes it sour taste from the sour yogurt added. You can also use lemon juice if you want the prominent sourness. Serve this snack with a sweet chutney. Ingredients:
- 1 cup regular rice
- 1/4th cup Urad dal
- ½ cup sour yogurt
- ½ inch finely chopped ginger
- 1 chopped green chilli
- 2-3 tbsp. of water
- ½ tsp oil for greasing the pan
- 1 tsp eno or ½ tsp baking soda
- Rock salt
- Black pepper powder
- Red chilli powder
- Roasted sesame seeds
How to Make Khatta Dhokla?
- Rinse the Urad dal in some water for a couple of times.
- Similarly, wash the rice and soak the dal and rice together for 3-4 hours.
- Strain the water and grind it in the grinder.
- Add the chopped ginger and green chillies as well.
- Add 2-3 tbsp. of water while grinding. Keep the batter thick like the idli batter.
- Pour the batter into a bowl. Add the sour yogurt and salt. Mix it well.
- Keep the batter in a warm place to ferment it overnight.
- Grease a pan. Add some water to your steamer and bring it to a boil.
- Add some oil to the batter and mix it well. then add baking soda to the batter. Quickly stir it so that the soda is distributed uniformly in the batter.
- Pour this batter into the greased pan and sprinkle some black pepper powder on top of it. Sprinkle red chilli powder and roasted sesame seeds.
- Place the pan in the steamer. Cover it and steam for 20-25 minutes. Steam it until a toothpick pierced in the dhoklas comes out clean.
- If you’re using a pressure cooker for steaming, then remove the whistle for steaming.
- When the dhoklas are steamed well, remove them and serve them hot with coriander chutney.
