How to Make: Spicy Mix Veg Chutney Pulao

The ingredients mentioned in the list are enough to serve 2-3 people. This dish will take 30 minutes for preparation and 15 minutes for cooking.

Ingredients:

For Pulao:

  •  1 cup basmati rice
  •  2 tbsp. oil
  •  1 large onion finely chopped
  •  1 large carrot finely diced
  •  1/8th tsp turmeric
  •  1 tsp. lemon juice
  •  2 cups water
  •  Salt to taste

For Chutney:

  •  50 gms coriander leaves
  •  10 gms mint leaves
  •  2 tbsp. grated coconut
  •  3-4 garlic cloves
  •  ½ inch chopped ginger
  •  2-3 green chillies chopped
  •  ½ tsp of cumin seeds
  •  2-3 tsp of water

Whole Spices:

  •  1 bay leaf (Tez Patta)
  •  1 inch cinnamon stick
  •  2 cloves
  •  2 cardamoms
  •  3-4 black peppers
  •  1 strand of mace

How to Make Spicy Veg Chutney Pulao?

1. Rinse 1 cup of basmati rice in water and soak them in water for half an hour.
2. Strain the rice and keep it aside.
3. Chop the vegetables mentioned in the list
4. Prepare the green chutney.
5. Grind the coriander and mint leaves to make a fine paste.
6. Heat some oil in a pressure cooker and add the whole spices and roast them for few seconds till you sense the smell.
7. Add the chopped onions to the oil and cook them until golden brown.
8. Add green chutney to the onions and sauté for a minute.

9. Add the chopped veggies and turmeric powder. Mix it well and cook.
10. Add 2 cups of water and 1 tsp of lemon juice. Add salt according to taste.
11. Cover the cooker with the lid and cook the rice for 1-2 whistles on medium flame.
12. Open the cooker when the pressure settles down. Serve the pulao hot with raita or curd.
