Kaju Katli Recipe

So why not try this super easy kaju katli recipe? All you need is 5 ingredients and lots of love for your loved ones.

Ingredients:

  • Cashews/kaju- 1 cup
  • Sugar- ½ cup
  • Water- 5 tbsp.
  • Ghee- 1 tbsp.
  • Saffron- a pinch

procedure:

  1.  Grind the cashews to make a fine powder. Keep in mind that we don’t want to make a paste out of it. The cashews need to be dry and in powder form and not a paste like consistency.
  2.  In a thick bottomed pan heat water and the sugar on a low flame. Add the saffron to the sugar syrup.
  3.  When the water is heated and the sugar has dissolved completely, add the ground cashews to the sugar syrup. When preparing the syrup, you don’t really have to be cautious of the consistency. You just need to dissolve the sugar and then add the ground cashews.
  4.  Mix the cashews with the sugar syrup really well. Keep stirring and cooking the cashew mixture on a low flame continuously.
  5.  The mixture will start to thicken while you cook it. After 7-8 minutes the mixture will start to come together and will form a ball.
  6.  Take off the mixture from the pan and place in a bowl or a plate. At this moment you can add the ghee to it. Let the mixture cool down a bit so that it is easier for you to handle.
  7.  Once the mixture is cold enough knead it. On a flat surface, roll the mixture with a rolling pin. You can also place a butter paper over the dough and then roll it with a rolling pin until up get a thickness of 4-5 mm.
  8.  Remove the butter paper. Allow the rolled dough to cool down.
  9.  When the mixture has cooled down, cut it into diamond shapes using a sharp knife.
  10.  Carefully remove the kaju katli from the surface with the help of a knife and place on a serving plate.
  11.  Serve your homemade kaju katli immediately or store them in an airtight container. But do not refrigerate.
