SERVES: 1
INGREDIENTS:
• 1 finely chopped Onion
• ½ medium-sized Capsicum, cut into stripes
• ¼ teaspoon of Red Chilli Powder
• ¼ teaspoon of Cumin Powder
• ¼ teaspoon of Coriander Powder
• 2 pinches of Turmeric Powder
• 2 pinches of Ajwain
• 2 tablespoons of Gram Flour (Besan)
• 1 ½ tablespoons of Curd
• 100 grams of Paneer (Cottage Cheese), diced or cubed
• 2 tablespoons of Olive Oil
• Salt to taste
• 1 Chapati/Roti

HOW TO PREPARE:
1. Take a pan and pour olive oil in it. Turn on the medium-high flame and let the oil heat.
2. Now add the onions and cook them for 4-5 minutes, till they become translucent.
3. Then, add the capsicum and sauté for another few minutes. Make sure NOT to overcook the onion to golden brown.
4. Now, add red chili powder, coriander powder, turmeric powder, ajwain and cumin powder into sautéed vegetables. Stir well and cook for 2-3 minutes.
5. Next, take a small bowl and pour curd in it. Then add besan to the curd and mix well, to remove any lumps and form a smooth paste.
6. Now, add this curd-besan mixture into the pan along with vegetable mixture. Stir well again.
7. Then add paneer into the pan and mix well gently. Make sure the grave is coated well on each paneer cube. And cook the Paneer Tikka until it soaks all the flavors of masala.
8. Now, take the chapatti (either you can cook fresh roti or use the leftover roti of last night), and heat on from both the sides on tawa.
9. Place the roti onto a plate and put a generous scoop of paneer tikka on it. Don’t overfill, otherwise, it will burst after rolling.
10. Now roll the chapatti and wrap in butter paper or tissue paper to keep it in place.
11. Serve hot with green chutney or surprise your kid with a tasteful lunch box recipe.
