Navratri Special: How To Make Lauki Ka Halwa

Lauki or Dudhi, as we all know it, is great to be consumed during the fast, whether you make sabzi of it or you cook it for halwa, which everyone loves to eat. Apart from being delicious, it has many health benefits, which includes keeping you fuller and healthy for a longer period of the fast days.

Many of you must be tired of your kids running away on the name of this nutritious vegetable, but even on any regular day, you can cook lauki ka halwa for your little ones, if you want them to have all the nutritional vegetables. It’s an easy to cook recipe but might take a little longer than any other halwa u make.

PREPARATION TIME: 15 MINUTES
COOKING TIME: 45 MINUTES
SERVES: 4

INGREDIENTS: *measuring cup, 1 cup = 250 ml
• 3-3 ½ cups of grated Dudhi or Lauki (Bottle Gourd)
• 500 ml of boiled Milk
• 7-8 tablespoons of Sugar
• 3-4 tablespoons of Desi Ghee
• 4-5 powdered Green Cardamoms
• ¼ cup of chopped Cashews
• ¼ cup of chopped Almonds

HOW TO PREPARE:
1. Take a deep pan or kadhai and pour milk and grated lauki in to it.

2. Now put in the high flame and bring it to a boil.
3. Simmer the flame and let it cook. Keep stirring to avoid burning.

4. Let the mixture reduce to ¾ of the original amount, i.e. lauki will be cooked and the milk will be reduced to 75%.
5. Then add cashews, cardamom powder, and almonds to the reduced mixture.

6. Now, check if all the milk has been absorbed by the lauki and the remaining has been evaporated, then add ghee to it and cook for another one minute.
7. Now, add sugar and stir to mix well.

8. Keep stirring as the sugar will melt and the mixture will become a little liquidity. Cook for a few minutes until it reaches the desired consistency.
9. Garnish with more dry fruits and serve the halwa hot for better taste.
