Paneer Makhani Recipe

Paneer makhani is a paneer cooked in thick gravy recipe. The gravy in this recipe is very creamy, buttery, tangy and a tiny bit of sweet all at the same time. This recipe is quite similar to the paneer butter masala recipe, which you can read here (hyperlink). Paneer makhani is your typical north Indian style paneer recipe that you can prepare at home easily and savour it with family and friends. So without any further due let’s get started with the recipe.

Ingredients:

  • Paneer- 250- 300 gm (Cubed)
  • Kashmiri red chilli powder- 1 ½ tsp.
  • Low fat cream- ¼ cup + 1 tbsp. (for garnishing)
  • Bay leaf- 1
  • Green chilli- 1 (slit)
  • Water- 1 ½ cup
  • Kasuri methi- ¾ tsp.
  • Garam masala- ¼ tsp.
  • Water- 1 ½ cup
  • Kasuri methi- ¾ tsp.
  • Sugar- ½ tsp.
  • Butter- 2 tbsp.
  • Ginger- ½ inch (julienned)
  • Salt- as per taste
  • Fresh coriander- 1 tbsp.
  • For the gravy:
  • Onion- 1, large (chopped)
  • Tomatoes- 4, medium (chopped)
  • Ginger- ½ inch (chopped)
  • Garlic- 4 cloves (chopped)
  • Javitri- 2 strands
  • Green cardamom- 3
  • Cinnamon- 1-inch stick
  • Cloves- 3
  • Cashew- 10-12 (whole)
  • Water- 1 cup

Procedure:

  1.  In a pan cook the chopped onion, tomatoes, garlic, ginger, cashews, cinnamon, javitri, cardamom and cloves with 1 cup water.
  2.  Cook all the above-mentioned ingredients without a lid until the tomatoes are softened and cooked. This will take around 12-15 minutes on a medium flame.
  3.  Let the mixture cool down completely and then grind this concoction along with the stock in a grinder to get a smooth paste.
  4.  Now heat butter in a pan and add the bay leaf to it. Let it sauté for a few seconds and then transfer the prepared paste to the pan.
  5.  Add the Kashmiri red chilli powder and cook the masala on a medium flame. Cook the masala while stirring regularly till you could see the butter separating from the butter. This may take  around anywhere between 18-22 minutes on a medium flame.
  6.  Add the green chilli, salt and water to the masala.
  7.  Stir well and let the gravy simmer for 2-3 minutes.
  8.  Now add the sugar and stir.
  9.  Add the paneer cubes and cook for 2 more minutes.
  10.  Now add the cream, garam masala and kasuri methi.
  11.  Mix and turn off the flame. garnish with cream, chopped coriander and julienned ginger.
  12.  Serve the paneer makhani hot with roti, naan or even steamed rice.
