Potato Curry Recipe (South Indian Style)

I guess potato curry is one of those dishes which is prepared and eaten in almost all the parts of India. North, south, east and west, each part has a different version of the potato curry. The only thing which separates all these curries are the ingredients used in them and the cooking technique used. So today I am going to share with you the potato curry recipe, south Indian style. you can make this to accompany your dosa, rava idli or you can also serve this with pooris.

So without any further due let’s get started with the recipe.

Ingredients:

  • Potatoes- 3-4, medium sized (boiled, peeled and crumbled/chopped)
  • Oil- 1 tbsp.
  • Mustard seeds- 1 tsp.
  • Urad dal- 1 tsp.
  • Chana dal- 1 tsp.
  • Onion- 1, large (chopped)
  • Green chilli- 1-2
  • Ginger- 1 tsp. (finely chopped)
  • Curry leaves- 7-8
  • Tomato- 1, small (chopped)
  • Turmeric powder- ¼ tsp.
  • Asafoetida- a pinch
  • Gram flour/besan- 2 tsp.
  • Water- 1 ¼ cup
  • Salt- as per taste
  • Fresh coriander- 2 tbsp.

Procedure:

  1.  In a pan or kadhai, heat the oil and add the mustard seeds to it. Let the mustard seeds crackle.
  2.  Now add the urad dal and the chana dal and let them roast until they are nice and toasted. Make sure not to burn them.
  3.  Now add the curry leaves and cook for a few seconds.
  4.  Now add the chopped onions cook them until they are light golden in colour.
  5.  Now add the chopped green chili and the chopped ginger, sauté for a few seconds.
  6.  Add the chopped tomatoes and mix. Cook the tomatoes for 2-3 minutes. add the turmeric powder and the asafoetida. Stir and cook for 2 minutes.
  7.  Add the gram flour. mix and sauté the gram flour so that it is cooked really well.
  8.  add the water to the masala and bring it to a boil.
  9.  Now add the potatoes and mix well.
  10.  Add the salt and cover the pan with a lid. Let the gravy cook on a low flame for 8-10minutes or till the gravy thickens. Make sure to check the consistency of the gravy during the cooking process to get it right. The consistency of the gravy should neither be too thick nor too thin.
  11.  Check the seasoning and adjust it accordingly.
  12.  Add the chopped fresh coriander leaves.
  13.  Turn off the flame.
  14.  Serve the potato curry with pooris, dosa, paratha or rava idli.
