Ramadan Special: How To Make Hyderabadi Haleem

PREPARATION TIME: 25 MINUTES
COOKING TIME: 45 MINUTES
SERVES: 10

INGREDIENTS:

• 1 kg of Boneless Mutton
• 2 teaspoons of Ginger Paste
• 1 cup of Urad Dal
• 1 teaspoon of Red Chili Powder
• 2 cups of Curd
• ½ cup of Cashews
• ½ teaspoon of Peppercorns
• ½ cup of Ghee
• ½ cup of fresh Mint
• 3 cups of crushed Whole Wheat
• 2 teaspoons of Garlic Paste
• 1 cup of Chana Dal
• ¼ teaspoon of Turmeric Powder
• 1 cup of Onion
• 1 teaspoon of Garam Masala Powder
• 1 inch of Cinnamon Stick
• 1 cup of fresh Coriander Leaves
• 6 Green Chilies
• 2 Fresh Lemon Wedges for garnishing

HOW TO PREPARE:

1. First, take the cracked wheat and wash it thoroughly. And then soak it for at least 30 minutes.
2. Now, trim off the excess fat from the boneless mutton.
3. Then take a bowl and add mutton, ½ teaspoon of ginger and garlic paste each, ½ teaspoon of salt, red chili powder, a pinch of turmeric powder and ½ teaspoon of garam masala powder. Mix all the ingredients well and pressure cook for 10 minutes.
4. Now slow cook for another 15-20 minutes and then shred it. Keep aside.
5. Meanwhile, take urad dal, chana dal, soaked cracked wheat, 3 green chilies, turmeric powder, ginger and garlic paste, peppercorns and 8-10 cups of water, and cook all the ingredients until they soak the water completely.
6. Now blend the mixture when completely boiled and cooked.
7. Next, take a pan and pour oil or ghee in it. Let it heat on high flame.
8. Then put remaining green chilies, whole spices, shredded mutton, ½ cup of fresh coriander leaves, and cook everything together for 2-3 minutes.
9. Now add curd into the pan and sauté for the next 10-15 minutes. Add 3 cups of water and boil the mixture.
10. After that, add the blended cracked wheat into the pan, along with all the boiling ingredients and stir well. Add ghee alongside.
11. Now let everything cook on simmer for at least 30 minutes.
12. Serve immediately and hot. Garnish with fried onions, lemon wedges, fresh coriander leaves, and cashews.
