Ramadan Special: Qubani Ka Meetha Recipe

Qubani ka meetha is a traditional Hyderabadi apricot recipe, that is mostly cooked during the fasting of Ramadan. It is a delicious and an easy-to-make recipe that is sweet and nutritious at the same time.

PREPARATION TIME: 10 MINUTES
COOKING TIME: 15 MINUTES
SERVES: 6
INGREDIENTS:

• ½ kg of Dried Apricots
• ½ tablespoon of Saffron
• 1 ½ cup of Sugar
• Water as per the requirement
• Cashews, Pistachios or Almonds for garnish

HOW TO PREPARE:

1. Take the apricots and soak them in water for overnight, with the ratio of 1 part apricots and 3 parts of water.
2. Apricots will fluff into smooth balls the next morning. So, pressure cook them for 2-3 whistles to make them soft.
3. Strain the excess water from the apricots and reserve the water for later.
4. Then squeeze out the seeds from the cooked apricots and transfer them into a sieve. Throw the seeds away.
5. Now mash the cooked apricots in the sieve, keeping it over the reserved water.
6. Then, transfer all the content into a pan and put it on medium flame to cook.
7. Add sugar to the pan and stir well. Let it cook until it becomes thick in consistency.
8. Now add the saffron strands and mix well. take off from the heat and set aside to cool.
9. Then, garnish with some dry fruits and serve fresh. You can also refrigerate it in an air-tight container and eat later.
