Procedure:

  1.  Heat up a kadhai and first dry roast the semolina. Roast it on a low flame while continuously stirring it. Once it becomes a little fragrant turn off the flame pour out the semolina on a plate. Remember you don’t want to brown it.
  2.  Now in the same kadhai heat up some oil and add the mustard seeds to it. The mustard seeds will start to splatter which means they are getting cooked. Once the splattering stops, add the cumin, urad dal and chana dal to the oil and cook them on a low flame. Make sure not to burn the dals. You just want them to be golden.
  3.  Once the dals are cooked add the dried red chilli and asafoetida. Stir really well.
  4.  Now add the finely chopped onions and cook them till they turn slightly brown. Add the green chillies, ginger and curry leaves. Cook for a few seconds.
  5.  Now add the red chilli powder, turmeric and the tomatoes and stir. Turn the flame to low and cover the kadhai with a lid. Let the tomatoes cook in steam for 2-3 minutes.
  6.  After the prescribed time, remove the lid and check if the tomatoes are cooked or not. If the tomatoes are a little hard, cook them for a few more minutes.
  7.  Now add water and bring it to a boil. Once the water starts boiling, slowly start adding the semolina into the water. Keep stirring the water while adding the semolina or lumps may start to form.
  8.  Once you have added all the semolina, let it cook for a few minutes. Add the salt. The semolina will absorb all the water and will swell up.
  9.  Lastly add fresh chopped coriander and turn off the flame.
  10.  Serve your tomato upma hot.
