Garlic Chicken Recipe

The garlic chicken is a perfect appetizer or side dish recipe. The best part is that you need very less time to cook this one. It is a great recipe to prepare for parties as you can do all the prep work in advance a day before and cook it just before serving it. This spicy chicken goes really well with stir fried noodles or fried rice. Here is the step by step recipe of this aromatic garlic chicken.

Ingredients:

Marinade:

  • Chicken- 300 grams (boneless strips/cubes)
  • Curd- 4 tbsp.
  • Salt- a pinch or two
  • Black pepper powder- a generous pinch
  • For seasoning:
  • Oil- 2 tbsp.
  • Curry leaves- 1 sprig
  • Cumin- ½ tsp.
  • Onion- 1, medium (finely chopped)

For sauce:

  • Red chilli- 5
  • Garlic- 5 cloves
  • Vinegar- ¾ tbsp.
  • Salt- as per taste
  • Water- just enough to make a paste

For garnishing:

  • Coriander leaves- a few
  • Onion- 1, small (sliced into rings)
  • Lemon- 1, sliced

Procedure:

  1.  In a bowl, add the curd, water, salt and pepper. Mix the ingredients really well and keep aside.
  2.  Rinse the chicken with water and soak it in the prepared buttermilk. Soak the chicken in the buttermilk for at least 2 hours. If you have enough time, try to keep it soaked in the buttermilk overnight as this way you will get the most tender and moist chicken.
  3.  Now in a blender add the red chillies, garlic cloves, vinegar, salt and water. Blend all the ingredients together to make a smooth sauce.
  4.  Drain all the excess buttermilk from the chicken and add the prepared sauce to the chicken. Let the chicken marinate in this sauce for 5 minutes. In case you want to fry the chicken at some time later, keep it in the refrigerator.
  5.  Heat oil in a pan. Add the curry leaves and cumin and sauté for 15-20 seconds.
  6.  Add the chopped onion and cook until golden brown in colour.
  7.  Now add the chicken and cook it on a high flame for 3-4 minutes. Once the chicken starts to turn white, put a lid and let the chicken cook on a low flame until the chicken is cooked.
  8.  Remove the lid and cook it further so that all the liquid has evaporated and you are left with a thick sauce.
  9.  Turn off the flame and garnish the garlic chicken with chopped coriander.
  10.  Your garlic chicken is ready to be served hot.
  11.  Serve it with onion rings and lemon wedges.
