Ghee Roast Chicken Recipe

If you love the flavour of ghee in your food, then you are going to love this ghee roasted chicken recipe. The chicken is cooked with normal spices and is then roasted in ghee until fragrant and roasted. You can serve this with roti, bread or naan depending on what you prefer. Also, you can adjust the spiciness according to your taste. Here is the step by step recipe of the same.

Ingredients:

  • Ghee- 2 tbsp.
  • Fresh curry leaves- 3 sprigs
  • Garlic- 2 cloves
  • Black pepper- ½ tbsp. (Crushed)

For the marinate:

  • Chicken- 500 grams
  • Lemon juice- 1 ½ tbsp.
  • Coriander leaves- 1 tbsp.
  • Turmeric powder- ¼ tsp.
  • Garam masala- 1 ½ tsp.
  • Red chilli powder- 1 ½ tsp.
  • Onion- 3, large (finely chopped)
  • Ginger garlic paste- 1 tbsp.
  • Ghee- 1 tbsp.
  • Salt- as per taste

Procedure:

  1.  Wash the chicken really well and keep it aside in a pasta strainer to get rid of all the excess water.
  2.  Add the washed and drained chicken along with all the other ingredients mentioned under the heading “For the marinate” and cook the chicken until cooked and tender.
  3.  Once the chicken is almost cooked, see if there is a lot of moisture in the pot. If yes, then turn the flame on medium high and evaporate all the water.
  4.  Once all the water has evaporated, turn off the flame and set the chicken aside for 35-45 minutes.
  5.  Now heat ghee in a small pan and add the chopped garlic and curry leaves. Sauté until the garlic is cooked and the curry leaves are crisp.
  6.  Pour this tempering over the prepared chicken.
  7.  Put the chicken back on the flame and start roasting it.
  8.  When the chicken is roasted add the crushed black pepper and salt if required.
  9.  Roast for some more time and then turn off the flame.
  10.  Serve the ghee roast chicken with naan, bread or roti.
