Hara Bhara Kebab Recipe

So I am back with another great vegetarian snack recipe and this time it is the hara bhara kebab. I had this appetizer several years ago on a trip to Mumbai and got hooked onto it instantly. This kebab is green in colour and thus is named hara bhara kebab. It is a great party snack and also the perfect accompaniment to your evening tea. If you haven’t tried it already then do it now and without any further due let’s get started with the recipe.

Ingredients:

  • Spinach/palak- 2 cups
  • Potato/aloo- 2 (medium sized, boiled)
  • Gren peas/matar- ¾ cup (boiled)
  • Dried mango powder/amchur- 1 tsp. (Approx.)
  • Chat masala- 1 tsp. (Approx.)
  • Green chilli and ginger paste- 2 tsp.
  • Gram flour/besan- 2-3 tbsp.
  • Salt to taste
  • Oil to cook the kebabs

Procedures:

  1.  Blanch the spinach leaves in salted water and then immediately transfer the leaves to chilled water in order to cooking process and retain its colour.
  2.  Chop the blanched spinach and keep it aside.
  3.  In a pan or kadhai roast the gram flour until it gets fragrant and the colour is slightly changed. But make sure not to burn it.
  4.  Now in a bowl add the chopped spinach, mashed boiled potato, boiled mashed peas and the green chilli paste. Mix everything really well.
  5.  Now add the mango powder, chat masala, gram flour and salt to the vegetable mixture. Mix the spices in.
  6.  Now form small kebabs with the mixture and shallow fry them on low to medium flame. Cook the kebab from both the sides till brown and crisp.
  7.  Serve your hara bhara kebabs with your favourite chutney or sauce.

You can also deep fry or bake these kebabs.
