How to Make: Cool and Refreshing Rabri Faluda

Summer means ‘cool and refreshing desserts’. Isn’t it? You can’t find a single person who doesn’t relish Rabri Faluda in the summer season. But somehow if you don’t know what this Indian Dessert is all about, then let me tell you, Rabdi is flavoured condensed milk while the faluda looks like rice noodles which are made up of corn starch. You can find this delicacy in each and every nook and corner of our country. And if you’re from Delhi, then perhaps you’re lucky. So try this recipe and enjoy your summertime with sumptuous Rabri Faluda.

The ingredients mentioned in the recipe will serve six people.

Ingredients:

– ½ cup corn starch
– 2 cups water
– ½ cup sugar
– ¼ cup water
– 12 strings of saffron
– 2 cups milk
– 4 cardamom pods
– 4 tbsp. rose syrup
– Chopped almonds
– 4 tbsp. Sabja seeds
– Ice cold water and a wide bowl
– Sev maker

How to make Rabri Faluda

For Rabri:

1. Soak some Sabja seeds in water for at least an hour.
2. Take a thick-bottomed pan and heat some milk in it.
3. Heat the milk till it’s reduced to half while stirring.
4. Add cardamom powder and sugar to the milk and stir it until it becomes thick. Turn the heat
off and keep the mixture aside.

For Faluda:

1. Add water to corn starch while stirring it so that no lump is formed. Add water such that the batter looks like milk.
2. Add the batter to a pan and heat it on a medium flame. Keep stirring it continuously. Heat it till the batter becomes translucent and the consistency becomes like a soft dough. Turn off the heat.
3. Cool the mixture a bit and pour it into a sev maker. Extract the sec strings over a bowl of cold water.
4. Let the faluda sit in the cool water for 2 hours at least.

How to Serve Rabri Faluda?

Take a glass and fill it 1/4th with faluda. Place some rabdi over it. You can also add some vanilla ice cream for added flavours. Garnish it with chopped almonds or pistachios. You can also pour some sugar syrup for sweetness.
