Ingredients:

  • Sugar- 1 cup
  • Water- 1 ½ cup
  • Green cardamom- 3
  • Lemon juice- 2 drops
  • Milk powder- ½ cup
  • All-purpose flour- 1 tbsp.
  • Baking soda- 1/8 tsp.
  • Ghee- 1 tbsp.
  • Milk- 2-3 tbsp.
  • Oil/ghee- for deep frying

Procedure:

  1.  In a pot, add the sugar, water, lemon juice and the cardamom pods. Stir the mixture and turn on the flame and heat the solution on a medium flame. You need to prepare a sugar syrup with ½ string consistency. On a medium flame, it will take you about 8-10 minutes to reach this consistency.
  2.  In a bowl take the milk powder, all-purpose flour and baking soda. Mix all the ingredients really well.
  3.  Add ghee to the dry ingredients. Rub the mixture with your hands in order to combine the ghee with the dry ingredients.
  4.  Add 2 tbsp. of milk to the mixture and mix. You can add a few more tsp. of milk in order to get a dough like consistency. But remember that you don’t have to knead the dough or else the gulab jamuns will turn out be hard.
  5.  Divide the mixture into 10-12 small portions. Oil your palms and roll the mixture between your palms to make small round balls. Make sure there are no cracks.
  6.  Heat the ghee/oil in a kadhai or pan. When the oil looks hot enough to you just add a pinch of the mixture in the oil, if it does not come to the surface immediately, the oil is ready for the deep frying.
  7.  Add not more than 4-5 balls in the hot oil and fry them on a low flame until they are golden brown from all the sides. It will take around 6-7 minutes for the gulab jamuns to be perfectly cooked.
  8.  Cook all the prepared balls in a similar manner.
  9.  Now reheat the sugar syrup (don’t boil it) and add the gulab jamuns to it. Soak the gulab jamuns in the syrup for 2 hours before you serve them.
  10.  Serve the instant gulab jamuns hot.
