Paneer Do Pyaza Recipe

Paneer do pyaza is a Mughlai dish which is very popular in the northern part of the country. It is a creamy fragrant gravy with melt in your mouth paneer cubes in it. The speciality about this recipe is that onion is used both to make the gravy or base as well as the main ingredient. Thus the name paneer do pyaza. The gravy is very mildly spiced but you will get the aromatic fragrance from the whole spices as well as a faint sweetness from the cream and onions. It is a great recipe to try at home. here is the step by step recipe to make paneer do pyaza at home.

Ingredients:

  • Paneer- 250 gm (Cubed)
  • Onion- 2, medium sized (whole) + 2, medium sized (chopped)
  • Tomatoes- 2, medium sized
  • Ginger garlic paste- ½ tsp.
  • Cinnamon/dal chini- 1-inch stick
  • Green cardamom/elaichi- 3
  • Cloves/laung- 3
  • Mace/javitri- 1 strand
  • Bay leaf/tej patta- 1, medium sized
  • Dry red chilli- 3
  • Turmeric/haldi powder- ¼ tsp.
  • Coriander/dhaniya powder- ½ tsp.
  • Cumin/jeera powder- ½ tsp.
  • Black pepper powder- ¼ tsp.
  • Garam masala- ½ tsp.
  • Nutmeg/jayephal- 2 pinch
  • Fresh cream- 3 tbsp.
  • Oil- 1 ½ tbsp.
  • Salt- as per taste
  • Fresh coriander- 1 tbsp. (chopped)

Procedure:

  1.  For this recipe, we will be using two onions as the base of the recipe and the other two as the main ingredient.
  2.  Peel and wash all the onions. Finely chop two onions and cut the other two into just quarters.
  3.  Boil water in a pot and blanch the onion quarters in it. Add the tomatoes as well. Cook the onion and the tomatoes for 2 minutes and then turn off the flame. Leave the onions and tomatoes in the hot water for 20 minutes.
  4.  After the time lapse, remove the tomatoes and onions from the water. Let them cool down a bit. now peel the skin of the tomatoes and separate the individual layers of the onion.
  5.  Chop the blanched tomatoes finely.
  6.  Heat some oil in a pan and cook the onion layers until they are golden. remove from pan and keep aside.
  7.  In the same pan add more oil and heat it. Add the whole spices and sauté them until they start releasing their aroma.
  8.  Add the chopped onions and cook them until golden in colour.
  9.  Now add the chopped tomatoes and the ginger garlic paste. Cook until the raw aroma of the ginger garlic fades away and the tomatoes are cooked well.
  10.  Add the cumin powder, coriander powder, turmeric powder, nutmeg powder, black pepper powder and the garam masala. Mix all the spices really well.
  11.  Add the cooked onions to the prepared masala and cook for 2 minutes.
  12.  Add the paneer and salt. Mix well and cook for another 2 minutes.
  13.  Now add the cream and stir.
  14.  Garnish with chopped coriander leaves.
  15.  Serve paneer do pyaza with roti, naan or parathas.
