Prepare These 5 Delectable Snacks with the Leftover Rice

Most of the people face a hard time while deciding the quantity of the rice to be cooked. And hence, they end up cooking some extra rice and as a result, it ends up being tossed in the bin. The next time you make some extra rice, think twice before throwing it away. You can do a lot with the leftover rice than you can think. Read on to know how these delicious leftover rice dishes are made.

1. Rice Pudding
Take a bowl and transfer the leftover rice to it. Add the beaten eggs, sugar and fresh milk to it. Add the nutmeg powder, cinnamon powder, lemon zest, raisins on top of it. Add the vanilla essence to enhance the flavour. Take one medium sized baking dish and butter it properly. Transfer the rice mixture to it. Fill a large pan with water and carefully place the baking dish in it. Bake the dish in a pre-heated oven at 350 degrees for 45 minutes. Your pudding will be ready.

2. Masala Fried Rice
Fry the whole black mustard seeds and cumin seeds in some oil. Once they start cracking, add some chopped onions and sauté them until they become translucent. Prepare a mushy mixture by continuously sautéing them. Add the chopped tomatoes, green chillies and curry leaves to the onion mixture. Add the spices like turmeric powder, coriander powder, red chilli powder and garam masala. Add the cooked rice to the mixture and mix it well. garnish it with coriander leaves.

3. Rice Paratha
Prepare a tight dough using some flour, water and oil. Add a pinch of salt to the flour while preparing the dough. Keep aside and cover it with a moist cloth. Prepare the stuffing of paratha by roasting the cumin seeds in some hot oil. Add the chopped onions and garlic paste and sauté them for 1-2 minutes. Add the tomatoes and sprinkle turmeric powder, red chilli powder on the top of it. Cook it till the mixture becomes mushy. Add the cooked rice to it and blend it properly. This would be your stuffing. Let it cool down. Prepare the parathas by placing this mixture at the centre of the dough. Serve the parathas with butter.

4. Rice Idli
Soak the split black gram and idli rava in water for at least 2-3 hours before preparing the idli. Drain it carefully and while draining, hold some water back. Add the cooked rice, idli rava and soaked black gram in a grinder and add some water. Blend it to make a paste. Again add 7 teaspoons of water and then blend it to make the idli batter fluffier. Add some salt and leave it overnight. Prepare the idli using the batter.

5. Rice Dumpling
Add some sesame seeds to the prepared rice and blend it well in a grinder. Add some black pepper powder and a pinch of salt. Keep the mixture aside. The stuffing is prepared by mashing the boneless chicken meat with paneer, chopped green chillies and salt. Divide the rice mixture into small balls and then stuff the chicken filling into it. Heat some oil in a non-stick pan and deep fry these balls. Serve it hot with chutney.
