Puffed Rice Laddu (Murmura Laddu) Recipe

Puffed rice laddu or the murmura laddu is a light, crispy and sweet snack which is very popular all over the country. Kids especially love this one for its sugary almost caramel like sweetness. Though you can easily get them in the market, but if you want to make these sweet delights at your home then here is a step by step recipe for the same.

Ingredients:

  • Puffed rice/murmura- 3 cups
  • Jiggery/Gur- ½ cup
  • Roasted gram- ¼ cup
  • Cardamom powder- ¼ tsp.
  • Water- 4 tbsp.

Ingredients:

  1.  In a kadhai or pan, dry roast the puffed rice for a minute or two. Transfer the roasted puffed rice to a bowl and keep it aside.
  2.  In a pan, add the jaggery (broken into small pieces) along with the 4 tbsp. water. Turn on the flame and cook it till the jaggery has melted and combined with water completely. Turn off the flame.
  3.  To remove impurities from the jaggery water, pass it through a sieve. Now transfer the clean jaggery water to the pan and start heating it while continuously stirring it.
  4.  Add the cardamom powder to the melted jaggery and mix.
  5.  Keep cooking the syrup till strings start to form. In order to be sure of the right consistency, add a few drops of the syrup in a bowl of water. If the syrup does not get dissolved in the water and forms a soft ball, then your syrup is ready.
  6.  Now lower the flame and add the roasted puffed rice to the jaggery syrup. Add the roasted gram and mix everything really well.
  7.  Wet your palms, take some of the mixture in your hands and start pressing the mixture to make laddus. You have to start making the laddus when the mixture is still hot otherwise, you won’t be able to shape them correctly.
  8.  If at the end of the process the mixture gets a little hot, put it on the heat again and warm it up lightly. The mixture will loosen up a bit and you can continue with the process of making laddus.
  9.  Serve the laddus as a snack or a quick dessert.
