Sev Puri Recipe

Sev Puri is an ultimate Mumbai street food. It is a cousin of delicious papdi chaat as the ingredients are almost similar but still the two are extremely different. So the sev puri basically comprises papdi, potato mash, chutniey, curd, spices and sev. All you have to do is make layers of all the ingredients and your sev puri is ready. It is a perfect snack item for your family and uninvited guests. The recipe is fairly easy to prepare,
so without any further due let’s get started with the recipe.

Ingredients:

Papdi/flat puri- 24

  • Curd- 250 (chilled and whisked)
  • Potato- 1, large (boiled, peeled and mashed)
  • Onion- 1, medium (finely chopped)
  • Fresh coriander- 3-4 tbsp. (chopped)
  • Mint coriander chutney- 1 cup
  • Dates tamarind chutney- 1 cup
  • Red chilli powder- 1-2 tsp.
  • Cumin powder- 1-2 tsp.
  • Chaat masala- 1-2 tsp.
  • Black salt- 1-2 tsp.
  • Sev- 1 cup

For the chutney:

  • Mint leaves- 1 cup
  • Coriander leaves- ½ cup
  • Green chilli- 1, chopped
  • Lemon juice- 1 ½ tbsp.
  • Black salt- as per taste
  • For the dates tamarind chutney:
  • Tamarind/imli- ½ cup
  • Dates/khajur (seedless)- ½ cup
  • Jaggery/gur- ½ cup
  • Dry ginger powder/saunth- ½ tsp.
  • Coriander/dhania powder -1 tsp.
  • Cumin/jeera powder- 1 tsp.
  • Water- 2 cups
  • Black salt- as per taste
  • Procedure:

To prepare the green chutney:

  •  Blend the mint leaves, coriander leaves, chilli, lemon and salt with a little bit of water in a grinder to make a smooth paste. Take out in a bowl and keep aside.

To make the dates tamarind chutney:

  •  Boil the dates and tamarind in water. When the dates and tamarind are softened enough add the jaggery and all the spices and salt to the boiling concoction
  •  Cook until the jaggery has dissolved completely.
  •  Turn off the flame and allow the mixture to cool down a bit.
  •  Grind the sweet chutney to get a smooth consistency. Pass the chutney through a sieve to remove any unground bits of the dates or the tamarind. Check the seasoning and adjust it accordingly.
  •  Keep aside.

For the assembling:

  1.  You can assemble the papdi in a big platter or individual plates, depending on how you want to serve them.
  2.  Add salt and cumin powder to the mashed potatoes and mix it well.
  3.  After placing the papdis on the plate, add the potato mash and the chopped onion. Season with some salt, chaat masala and red chilli powder.
  4.  Now add the chilled yogurt (the quantity totally depends on your personal taste).
  5.  Add the green chutney and the sweet dates and tamarind chutney (again the quantity depends on your taste).
  6.  Sprinkle some red chilli powder, cumin powder, chaat masala and black salt.
  7.  Add the sev and garnish with fresh chopped coriander.
  8.  Serve the sev puri immediately.
