Tawa pulao is a very famous Mumbai street food. It is prepared on a tawa, unlike the usual pulao which is prepared in a pressure cooker or handi. The tawa pulao is mainly served by the pav bhaji vendors. The ingredients and the spices used in the pulao are almost the same as the ones used in pav bhaji, giving it somewhat similar taste to that of pav bhaji.

Ingredients:
For cooking the rice:
- Basmati rice- 1 cup
- Water- 4 cups
- Oil- 2-3 drops
- Salt to taste
For the masala:
- Capsicum- 1 medium sized (chopped)
- Tomatoes- 2 large (chopped)
- Onion- 1 medium sized (chopped)
- Ginger garlic paste- 1 tsp.
- Red chili powder- ¼ tsp.
- Turmeric or haldi powder- ¼ tsp.
- Pav bhaji masala- 2 tsp.
- Cumin seeds/ jeera- ½ tsp.
- Butter- 2 tbsp.
- Carrot- 1 (chopped)
- Potato- 1 (chopped)
- Green peas/matar- ½ cup
- Lemon juice- ½ tsp
- Fresh coriander- 2 tbsp. (chopped)
- Salt to taste
Procedure:
1. Rinse the rice in water, till the water starts running clear. Make sure to get rid of all the excess starch or the rice will get sticky.

2. Soak the rice in water for 30 minutes. After 30 minutes drain the water and transfer the rice to a pot. Add 4 cups of water, the oil and salt to the rice. Cover the rice till the rice are soft and cooked. The rice should be cooked but not mushy. This will take 10-15

3. Once the rice is cooked drain the excess water by transferring the rice to a strainer. Take a fork and lightly run it through the rice so as to let the steam escape.

4. Once the rice is completely cooled, cover the rice with a lid to prevent the rice from drying out.
For the masala-
1. In a pressure cooker or a pan, steam the potato, carrot and green peas. Peel and chop the potato and carrot.

2. In a pan or kadhai, melt the butter. Add the cumin and let it toast a bit. Now add the chopped onion and cook them through. The onion should get light brown in colour.

3. Add the ginger garlic paste and cook it till the paste is cooked and start leaving the butter.
4. Now add in the chopped tomatoes and capsicum.

5. Add the red chili powder, turmeric powder and the pav bhaji masala to the vegetable mix and cook till the masala starts leaving the butter on the sides.
6. Now add the chopped carrots, potato and peas.
7. Add salt to taste and stir. Now add the cooked rice and mix the masala with the rice. The rice is already cooked so you don’t have to cook the rice too much here.

8. Garnish the tawa pulao with fresh chopped coriander and lemon juice.
