Ingredients:
- Whole wheat flour/atta- 1 cup + extra for dusting
- Salt- ¼ tsp.
- Oil or ghee- 1 tsp.
- Water- for kneading the dough
- For the stuffing:
- Cheese- ½ cup (grated)
- Onions- ¼ cup (finely chopped)
- Green chilli- 1-2 (finely chopped)
- Black pepper- ¼ to ½ tsp.
- Salt- as per taste
- Oil or ghee- for cooking the paratha
Procedure:
- Â In a bowl, take the whole wheat flour, salt and oil. rub the ingredients together really well. Start adding water slowly and knead it to form a soft dough. Cover the dough with a damp cloth and keep it aside to rest for 25-30 minutes.
- Â In another bowl, add the cheese, green chilli, onion, black pepper and salt. Mix the ingredients really well.
- Â Take two small balls of the dough and roll them between your palms. Dust them with some dry flour and roll each of the balls into 4-5 inch rounds. Try to make the rounds of the same size.
- Â Now place a good amount of stuffing in the centre of one of the rounds. Place the other round over the top of the first round and seal the edges with your fingers.
- Â If needed, dust with some extra flour and roll the paratha with a rolling pin to a satisfactory size.
-  Heat the tawa and place the stuffed paratha on it. Wait for a few seconds and flip the paratha. Apply some oil/ghee on the top side of the paratha and after a few seconds flip it. Let the oiled  side cook for a minute. Meanwhile, apply some ghee/oil on the top side of the paratha. Flip again and cook this side similarly.
-  You might have to flip the paratha quite a few times to get it cooked evenly. You can also press the edges of the paratha with a spatula to get them nice and crisp. Once the paratha looks  cooked, looks crispy and you could see the browning marks on it, take the paratha off the flame.
- Â Prepare all the parathas like this.
- Â Serve your cheese paratha hot with curd, ketchup or tea.
