There is a whole lot of variety when it comes to non-vegetarian kebabs but there are not enough options for the vegetarians. The worst part is that most of the restaurants or eating joints just serve the non-vegetarian kebabs and nothing for the vegetarians, making us feel left out. Keeping all this in mind we have come up with a vegetarian seekh kebab recipe which is very easy to prepare and even more delicious to eat. So without any further due let’s get started with the recipe.

Ingredients:
Potatoes- 3, medium sized (boiled)
Soya granules- 1 ½ cup
Green peas- ½ cup
Ginger garlic paste- 1 tsp.
Salt- as per taste
Coriander powder- 1 tsp.
Garam masala- ½ tsp.
Red chilli powder- ½ tsp.
Black pepper- ½ tsp. (crushed)
Dry mango powder- ¼ tsp.
Gram flour/besan- 2 tbsp.
Oil- for cooking the kebabs
Procedure:
1. Steam the green peas so that they are soft but not mushy.
2. Soak the soya chunks in hot water until they are soft.
3. Take the boiled and peeled potatoes and the steamed peas in a bowl and mash them with a potato masher.
4. Drain the excess water from the soya granules and squeeze the excess water from the granules. Wash the soaked soya granules at least 2 times in cold water and squeeze off the excess liquid.
5. Now in a pan dry roast the gram flour until it changes colour and smells roasted. Make sure to stir the gram flour continuously in order to prevent it from burning.
6. Now add the soaked and drained soya chunks and the ginger garlic paste to the bowl of mashed peas and potato mixture.
7. Also add all the spices, roasted gram flour and the salt to the mash. Mix all the ingredients really well until you have a uniform mixture. Check the seasoning at this point and adjust it if you have to. If you feel that the mixture is very sticky you can also add some more gram flour to it.
8. Divide the kebab mixture into 9-10 equal portions and roll them on skewers.
9. Heat your grilling pan and spread some oil over it. Place the prepared seekhs on the grill and let them cook on a low flame. Turn them around every five minutes in order to cook them evenly from all the sides. The kebab will take around 30 minutes to get cooked.
10. When the kebabs look cooked, turn the flame high and roast them from all the sides for a few minutes.
11. Serve the veg seekh kebab hot with sliced onion, lemon wedges, mint coriander chutney and tomato ketchup.
