Ingredients:

  • Potatoes- 2, medium sized
  • Gram flour/besan- ½ cup
  • Rice flour- 2 tbsp.
  • Salt- as per taste
  • Ginger garlic paste- ½ tsp.
  • Carom seeds/ajwain- ½ tsp.
  • Garam masala powder- ¼ tsp.
  • Red chilli powder- ½ tsp.
  • Turmeric- a generous pinch

Procedure:

  1. Wash and peel the potatoes.
  2. Slice the potatoes into thin slices and keep them stored in a bowl of water. This will prevent the browning of the potatoes.
  3. In another bowl add the gram flour, rice flour, ginger garlic paste, garam masala powder, turmeric powder, ajwain, red chilli powder and salt. Mix all the ingredients together.
  4. Start adding the water to it slowly to make a medium consistency batter. The batter should neither be too thick or too thin.
  5. Now heat oil in a kadhai. Add some batter into the oil to check the temperature of the oil. The batter should come to the surface quickly but should not get browned too quickly.
  6. Dip each slice of potato in the prepared gram flour batter and place it into the hot oil. Fry the pakoras until golden and crisp from both the sides.
  7. Remove the cooked pakoras on a kitchen paper towel and drain the excess oil.
  8. Serve the pakoras hot with mint coriander chutney and tomato ketchup.
