Poha is one breakfast recipe which is quite popular in various Indian states such as Maharashtra, Gujrat and Madhya Pradesh. Not only it tastes good but it is also very filling and nutritious. It provides the much-needed carbs to our body which provides us with the energy to get started for the day. The peanuts add healthy fats and the lemon gives a boost vitamin C. It is a one pot dish and is super easy to prepare. So without any further due let’s get started with the recipe.

Ingredients:
- Poha- 1 ½ cup (thick)
- Potato- 1, large (cubed)
- Onion- 1, medium (finely chopped)
- Green chilli- 1 (finely chopped)
- Curry leaves- 10-12
- Mustard seeds/rai-1 tsp.
- Roasted peanuts- 2 tbsp.
- Turmeric powder- ½ tsp.
- Fresh coriander- 1 tbsp. (chopped)
- Oil- 2 tbsp.
- Salt- as per taste
Procedure:
- Â Place the poha in a pasta strainer and rinse the poha under running water two to three times. While you are rinsing the poha it will soften enough but if it does not happen then sprinkle some water on the poha and let it soften a bit.
- Â In a kadhai, heat some oil. Add the cubed potatoes to it and cook them until cooked and golden in colour. Once cooked remove the potatoes from the kadhai and keep aside.
- Â To the same kadhai, add the mustard seeds and let them splutter. Now add the finely chopped onion and cook them until light brown in colour.
- Â Add the green chili and the curry leaves.
- Â Add the turmeric powder and peanuts. Mix it well.
- Â Now add the poha and mix it nicely with the everything else. The poha should be mixed really well so that there are no unmixed white spots.
- Â Now add the cooked potatoes and salt to it. Mix again.
- Â Cover with lid and let the poha cook for 2-3 minutes on a low flame. Now turn off the flame and let the poha cook for another 3-4 minute with the lid on.
- Â Remove the lid and garnish the poha with fresh chopped coriander.
- Â Serve the poha with sev and a lemon wedge.
