Burnt Garlic Fried Rice

I have already shared quite a few fried rice recipes until now and I am going to share one more today. The one I am going to share today is the burnt garlic fried rice recipe. It is one of those recipes that you can find on restaurant menus but seldom makes it at home. Unlike the normal fried rice, this one has a prominent taste of garlic that too a little burnt. But I can promise that you are going to love this recipe. So without any further due let’s get started with the recipe.

Ingredients:
For cooking the rice:
Basmati rice- ½ cup
Water- 3 cups
Salt- ¼ tsp.
Sesame or vegetable oil- ¼ tsp.
Other ingredients:
Oil- 2 tbsp.
Garlic- 1 tbsp. (finely chopped)
Spring onions whites- 1/3 cup
Carrot- 1/3 cup (Finely chopped)
Beans- 5-6 (Finely chopped)
Capsicum- 1/3 cup (Finely chopped)
Crushed black pepper- ½ tsp.
Soy sauce- 1 tsp.
Rice vinegar- ¼ tsp.
Spring onion green- 2-3 tbsp.
Salt- as par taste
Procedure:
1. Rinse the basmati rice with water 2-3 times or until the water starts running clear.
2. Heat water in a pot.
3. When the water starts to heat up add the salt and oil to it. Bring the water to boil.
4. When the water starts to boil, add the rice to it.
5. Stir the rice gently and cook it on a high flame until the rice is partially cooked.
6. Strain the rice in a colander and run cold tap water on the cooked rice in order to stop the cooking process.
7. Keep the rice aside and let them cool down.
8. Heat oil in a kadhai and add the chopped garlic. Cook the garlic on a low flame and when it starts to get golden brown in colour remove 1-2 tsp from the kadhai and keep aside.
9. Continue cooking the garlic until it is a bit more browned and burnt.
10. Add the spring onion whites to the oil and saute them for a minute on a high flame.
11. Add the chopped beans and saute for 2 minutes on a high flame.
12. Now add the carrot and capsicum to the kadhai and cook the veggies for a minute or two.
13. Add the crushed black pepper and soy sauce to the sautéed vegetables. Mix well.
14. Add the cooked rice to the kadhai and mix well with the vegetables.
15. Add the salt and the vinegar and mix well so that the salt is mixed well with the rice.
16. Cook the rice for a minute or two and then turn off the flame.
17. Garnish the rice with chopped spring onion greens and the reserved browned garlic bits.
18. Serve the burnt garlic fried rice hot.
