Chicken Chettinad Recipe

Chicken Chettinad is a flavorful, spiced south Indian style chicken curry (there is also a dry version of this). Though this recipe belongs to the southern part of the country but now it has become quite popular in other parts of the country as well. If you like recipes with a burst of flavours, then you are going to love it. Below I have explained a step by step recipe of the same. So without wasting any time further let’s get straight into the recipe.

Ingredients:

  • Chicken- 500 grams
  • Onion- 1, large (finely chopped)
  • Tomatoes- 2, medium (pureed)
  • Curry leaves- 2 sprigs
  • Oil- 2 tbsp.
  • Bay leaf- 1
  • For the marinade:
  • Turmeric- 1/8 tsp.
  • Red chilli powder- ¼ tsp.
  • Yogurt- 2 tsp.
  • Ginger garlic paste- 1 tbsp.
  • Salt- as per taste
  • Chettinad spice mix:
  • Poppy seeds/khus khus- 1 tbsp.
  • Grated coconut- ¼ cup
  • Coriander seeds- 2 tsp.
  • Fennel seeds- 1 tsp.
  • Cumin- ½ tsp.
  • Black peppercorns- ½ tsp.
  • Red chilli- 3-5
  • Green cardamom- 2
  • Cloves- 3
  • Cinnamon- 1-inch stick

Procedure:

  1.  In a bowl combine the turmeric powder, red chilli powder, yogurt, ginger garlic paste and salt. Marinate the chicken in the prepared marinade and set aside.
  2.  In a pan dry roast all the spices required for the chettinad spice powder, one by one. Let the spices cool.
  3.  Now grind the poppy seeds to make a fine powder, now add the rest of the spices to the grinder as well and grind them to get the chettinad masala. Now add some water to it and turn it into a smooth paste.
  4.  In a pan heat oil and add the chopped onion and the bay leaf to it. Cook the onion until it is golden brown in colour.
  5.  When the onion is cooked add the chicken to the pan and sauté it for 4-5 minutes.
  6.  Add the tomato puree to the pan, followed by turmeric, chilli powder and salt. Mix the contents well and cook until the fat starts to separate from the masala. now add the chettinad spice paste and curry leaves. Cook for another 2-3 minutes.
  7.  Now add the water and put a lid on the pan. Let the chicken cook until it is tender and cooked and the gravy has thickened.
  8.  Garnish the chicken chettinad with fried curry leaves.
  9.  Serve the chicken with roti or steamed rice.
