Hakka noodle is one dish that you can get at almost every restaurant whether Chinese or not. And it is not just limited to restaurants this dish has become so famous that you will find a hakka noodles vendor on all the nooks and corners of the street. Not only the kids but the grown-ups too enjoy eating it. But when you eat out you cannot be sure of the hygiene and cleanliness. Keeping in mind the hot season it is better to avoid eating out. But that should not stop you from eating your favorite dish. With this super simple recipe, you can make your favourite hakka noodles at home and be 100% sure of your family’s health. So without wasting any time, let’s get started with the recipe.
Ingredients-
- Hakka noodles- 200 gm (boiled)
- Spring onions- 4-5 (chopped)
- Carrot- 1 (finely chopped)
- French beans- 10-15 (finely chopped)
- Mushrooms- 4-5 (finely chopped
- Capsicum- 1 (finely chopped)
- Garlic- 5-6 cloves (finely chopped)
- Green chili- 3-4 (slit)
- White vinegar- ¼ tsp.
- Soy sauce- ½ tbsp.
- Oil- 2 tbsp.
- Salt to taste
- Black pepper as required

Procedure-
1. In a big pot, boil water and add salt to it. When the water starts to boil add the hakka noodle to the boiling water and cook them as per instructions on the packet.

2. When the noodles are cooked drain the water and rinse the noodle with cold water to stop the cooking process. Place the cooked noodles in a strainer to let all the water get drained.

3. In a wok or kadhai heat up some oil. Once the oil is hot add the green chili and sliced a garlic and cook them on a high flame. Now add the spring onions and cook them through.

4. Now start to add the vegetables depending on the time they will take to get cooked, for example, French beans will take the maximum time to cook so add it first. Cook the beans for around 3 minutes.

5. Now add the carrots, then mushrooms followed by capsicum. Cook all the vegetables on a high heat for 5 minutes.

6. Add the soy sauce and the hakka noodles to the vegetables and toss. Cook the vegetables and the noodles for a minute.

7. Add the salt and pepper. Add the vinegar as well and cook it for another minute or so on a high flame.

8. Your noodles are ready now. Garnish then with chopped greens of spring onions.
9. You can serve your tasty homemade hakka noodles with veg Manchurian or hot and sour gravy.

Note- Make sure that all the vegetables are chopped in the same size and shape or else they will cook unevenly.
