When it comes to using leftover rice the only recipe that strikes our mind is fried rice. But that is not the only recipe that you can prepare from cooked rice. There are tonnes of amazing recipes that you can prepare from leftover cooked rice. The recipe that I am going to share today is idli prepared with cooked rice instead of uncooked rice. You can serve these warm, pillow-soft idlis with coconut chutney and sambar. So here is a step by step recipe of the same.

Ingredients:
Steamed/cooked rice- 1 cup
Idli rava (chawal ka rava)- 1 cup
Urad dal- ½ cup
Water- 8-10 tbsp.
Salt- as per taste
Oil- for greasing the moulds
Procedure:
1. Soak the urad dal for at least 3 hours or more, if you have time.
2. Soak the idli rava 2 hours.
3. Once the urad dal and the idli rava is soaked, drain the excess water from both the ingredients.
4. Transfer the soaked uard dal, idli rava and the cooked rice to your grinder. Also, add a few tbsp. of water. Start the grinding.
5. Stop the grinding and add 6-7 tbsp. of water to the mixture and grind again.
6. When the batter is smooth and fluffy, it is ready.
7. Transfer the batter to a big bowl.
8. Add the salt and mix well.
9. Cover the bowl with a lid and allow it to ferment for 8-9 hours or overnight.
10. To steam the idlis, take a big pressure cooker in which the mould sits well. add 2-3 cups of water in it and place it on the flame.
11. While the water is heating up, grease the moulds with oil and fill them with the idli batter.
12. When the water starts releasing steam, place the mould in the steamer and cover with the lid (without the whistle).
13. Steam the idlis for 10-12 minutes or until a toothpick inserted comes out clean.
14. Remove the idlis from the moulds with a flexible sharp knife.
15. Serve the idli hot with sambar and coconut chutney.
