Ingredients needed for badam kulfi recipe:
- Almonds (peeled and grounded)- 2 cups
- Fresh cream- 8 tablespoons
- Condensed milk- 2 cups
- Saffron strands- 15
- Milk- 1/2 cup
- Pistachios- 6 pieces
- Almonds (blanched)- 2 tablespoons
Now, how to make badam kulfi:
- First, take a large bowl and add condensed milk, cream, and grounded almonds to it.
- Now, mix them well till the mixture gets thick.
- Take a saucepan, heat milk over a high flame.
- Once the milk starts to boil, add saffron strands to it.
- Then, mix them well and remove the saucepan from the flame.
- Keep the saffron milk aside to cool.
- Now, add almond mixture in saffron milk and stir.
- Make sure the consistency of the blend should be creamy.
- In the meantime, take another pan and add chopped almonds, pistachio to it.
- Now, roast them for few seconds.
- Then, add them to the kulfi mixture and keep few dry fruits for garnishing.
- Mix all the ingredients well and add them to the kulfi moulds.
- Cover the mould with a lid and place them in the freezer for 4 hours.
- Once the kulfi is set, remove them from the mould and garnish with pistachios and almonds.
- And your badam kulfi is ready to be served.
