The recipe that I am going to share with you today is one of the easiest and the quickest recipe that you can easily prepare on a busy weekday for breakfast. The egg bhurji/scrambled egg sandwich is one of my favourites, as it literally takes only a few minutes to prepare. You can also modify the recipe according to your choice by adding more vegetables or cheese to it. Here is a step by step recipe of the same.

Ingredients:
- Eggs- 2-3
- Pav- 2-3
- Onion- 1, medium (sliced)
- Carrot- 1, medium (grated)
- Tomato- 1, medium (Chopped)
- Oil- 1 tbsp.
- Cumin/jeera- ¼ tsp.
- Grated ginger- 1 tsp.
- Red chilli powder- 1/8 tsp.
- Green chilli- 1 (chopped)
- Black pepper powder- a big pinch
- Turmeric- a pinch
- Salt- as per taste
Procedure:
- Â Slice the pav from the middle so that the slices are joined at one side.
- Â Toast the pav on a pan and keep aside.
- Â Now heat oil in the same pan. Add the cumin and toast it a bit, add the sliced onion and cook until translucent.
-  Add the grated ginger and green chilli. Sauté for a few seconds.
- Â Add the tomato and cook until it is mushy and completely cooked. This will take about 5-7 minutes on a high flame.
- Â Add the carrot along with all the spice powders and salt.
- Â Mix all the ingredients really well.
- Â Crack the eggs and add to the pan. Scramble the eggs with the prepared masala and cook them on a medium flame until just cooked.
- Â Turn off the flame.
- Â Fill the pav with the prepared egg bhurji.
- Â Serve the egg bhurji sandwich hot.
