How To Make: Hyderabadi Nawabi Dahi Bhindi Masala Curry

This is easy bhindi curry that goes well with steamed rice, pulao or roti. It’s a good change from usual bhindi fry and bharwa bhindi.

Cooking time: 30 mins

Ingredients needed:

1. Bhindi/Okra- 1/2 Kg
2. Onion- 2 (large and finely chopped)
3. Oil
4. Tomato
5. Ginger
6. Garlic paste
7. Urad dal
8. Red chilli powder
9. Mustard seeds
10. Turmeric seeds
11. Dry grated coconut
12. Garam masala
13. Curry leaves
14. Amchur/dry mango powder
15. Cashews
16. Kasoori meethi
17. Coriander powder
18. Yoghurt
19. Salt
20. Water
21. Asafoetida/Heeng
22. Cumin seeds

Procedure:

1. First, grind the cashews with coconut into fine paste and keep aside.
2. Now, marinate the pieces of bhindi with and keep it aside for 30 mins.
3. Flame up the gas and put a pan.
4. Put oil in the pan and deep fry bhindi until it becomes crispy. Keep them on tissue papers to soak out excess oil.
5. Again, pour some oil min the pan and add mustard seeds, cumin seeds, dry chilli, urad dal and curry leaves. Stir them till they turn bit brown.
6. Now, add onion and ginger and fry them till they become soft. Add red chilli powder, turmeric powder, coriander powder, kasoori methi, amchur powder, garlic paste and garam masala and fry well.
7. When all the spices are fried well add tomatoes and mix it.
8. After that add the cashew coconut paste with beaten yoghurt into the pan.
9. When all the ingredients are mixed well add fried bhindi and cover them with all the spices.
10. Add little bit of water and cover the pan for few minutes and let it boil.
11. Now, open the lid and check the consistency of the curry you can add water and salt accordingly.
