Sukhi Arbi is a traditional recipe which is mostly prepared during vrat festivals. This recipe is very similar to potato fry but it only differs in the texture. This recipe of Sukhi Arbi goes very well with roti, poori and taste best when accompanied with dal.

Ingredients needed for Sukhi Arbi:
• Water- 2 1/2 cups
• Arbi (washed)- 200g
• Cumin seeds (jeera)- 1 teaspoon
• Carom seeds- 2 teaspoons
• Salt- for taste
• Coriander powder- 2 teaspoons
• Turmeric powder- 1 teaspoon
• Mustard oil- 3 tablespoons
• Asafoetida- a pinch
• Red chili powder- 1 teaspoon
• Amchur powder- 1 teaspoon

Now, how to prepare Sukhi Arbi.
• First, take a pressure cooker and pour water.
• Add the washed arbi to the cooker.
• And let it cook till 1 whistle.
• After a while open the lid and strain the water.
• Now, peel the skin of the arbi and cut in circular pieces.
• Then, heat the pan and add mustard oil.
• Add jeera to the pan and fry till it gets golden brown.
• After a minute add carom seeds and asafoetida.
• Then, add the arbi pieces and saute.
• Now, cover the lid and cook for 5 minutes.
• Once it turns golden brown add turmeric, red chili powder, salt, coriander powder and amchur.
• Saute all the ingredients and add a half cup of water.
• Now, cover it again with a lid,
• Then, cook till water evaporates.
• Once the water is reduced let it cook for another 2-3 minutes,
• And after that turn off the flame.
• Now, transfer it to another bowl.
• Your Sukhi Arbi is ready to be served.
