Lemon rice is a very famous and beloved south Indian dish. The main reason behind that is the tangy flavour and the ease with which one can prepare it. Even if you are very bad at cooking, you can still make it and that too perfectly. You can prepare these with freshly cooked rice or with leftover rice. Here is a step by step recipe of the same.

Ingredients:
Cooked rice- 3-4 cup
Lemon juice- 2 tbsp.
Mustard seeds- 1 tsp.
Urad dal- 1 tsp.
Dried red chili- 2
Green chili- 2, chopped
Curry leaves- 12-15
Asafoetida/hing- 1 generous pinch
Turmeric powder- ½ tsp.
Cashews- 1 tbsp. (halves)
Peanuts- ¼ cups
Salt- as per taste
Oil- 2-3 tbsp.
Procedure:
1. Heat a pan and add 2 tbsp. oil to it. fry the peanuts in the oil until they are crunchy. Remove the peanuts from the oil and keep them aside.
2. Add the cashews to the same oil and fry the cashews until golden. Remove from the oil and keep aside.
3. Now add 1 tbsp. oil to the same pan. Add mustard seeds to it and allow them to crackle. Now add the urad dal and roast it until golden in colour. Make sure to fry the ingredients on a low flame as you don’t want the ingredients to get burned.
4. Break the red chilies and add to the pan. Also, add the green chillies and the curry leaves. Sauté on a low flame until the red chilies change their colour.
5. Turn off the flame and add the turmeric powder and the asafoetida to the pan. Mix all the ingredients well.
6. Now add the prepared tempering over the rice.
7. Also, add the cashews, peanuts, salt and lemon juice on the rice. Mix everything really well.
8. Allow the rice to absorb all the flavours for 4-5 minutes.
9. Now serve the rice with papad and vegetable raita.
