Winters have almost arrived and with that comes the seasons of amazing food. Soon the vegetable markets will be flooded with green leafy vegetables such as spinach, fenugreek, bathua, etc. Can’t say about other people but at my house, we eat greens almost every day during the winter season. Paratha, saag, sandwich and what not; I like to take full advantage of the availability of these yummy greens. One of the most popular recipes at my house during winters is methi paratha. These are super easy to prepare and goes well with anything and everything. Here is a step by step recipe of the same.
Ingredients:
- Whole wheat flour- 2 cups
- Methi leaves- 1 cup
- Green chilli- 2, finely chopped
- Garlic- 7-8 cloves, finely chopped
- Oil- 2 tsp.
- Water- for kneading the dough
- Salt- as per taste
- Oil- for cooking the paratha
Procedure:
- Â In a bowl combine the flour, chopped methi leaves, green chillies, garlic, salt and oil.
- Â Start adding water to it and knead it to form a smooth dough.
- Â Divide the dough into medium sized balls and cover them with a damp kitchen towel.
-  Now take a dough ball and place it on the rolling surface. Dust the dough ball with some flour and flatten it with your  fingers. Start rolling the dough with a rolling pin to get a disc which is 4-5 inch in diameter.
-  Apply a generous amount of oil on this disc and fold it in half. Again, apply oil on the folded disc and again fold it in  half.  You will have a triangular shape dough now.
- Â Dust some flour and star rolling the paratha. You need to roll it until you get a disc which around 8 inches in diameter.
-  Now heat a tawa and place the prepared paratha on it. Apply oil and cook the paratha on both the sides until both the  sides are cooked and crisp. You will notice small brown marks on the paratha when it is cooked.
- Â Prepare all the parathas in a similar manner.
- Â Serve the methi paratha hot with butter or curd.
