In this recipe, mutton is first marinated in cashew nut paste, curd and mace powder which makes the taste of this biryani more delightful. Ingredients needed to make Lucknowi Mutton Biryani:
For marinade:
• Garlic paste- 1 teaspoon
• Ginger paste- 1 teaspoon
• Chilli powder- 1 teaspoon
• Garam masala- a pinch
• Cashew paste- 2 teaspoons
• Turmeric- 1 teaspoon
• Yoghurt- 4 teaspoons

For Biryani:
• Basmati rice – 2 cups
• Salt- 2 teaspoons
• Milk- 2 1/2 cup
• Mutton- 1/2 kg
• Cinnamon stick- 1 inch
• Cumin seeds- 2 teaspoons
• Coriander seeds- 2 teaspoons
• Cloves-10
• Fennel seeds- 1 teaspoon
• Black pepper- 1 teaspoon
• Mace powder- 1/2 teaspoon
• Black cardamom- 2
• Ghee- 3 teaspoons
• Star anise- 2
• Green cardamom- 3
• Refined oil- 4 tablespoons
• Saffron- 1 pinch
• Onion (large) -1

Now, how to make Lucknowi Mutton Biryani:
• First, take basmati rice in a bowl and wash it and later drain all the excess water from the rice.
• Now, boil the rice with double amount of water and take it off from flame once it’s half cooked.
• Then, take the mutton in a bowl and then add turmeric, chilli-powder and ginger- garlic paste.
• After that add cashew nut paste, curd and garam masala to the mutton and mix them thoroughly.
• Now, cover the marinated mutton and refrigerate it for an hour.
• In the meantime slice an onion and deep fry it.
• Take out the marinated mutton from the refrigerator and add season it with salt.
• Then, take a handi and add ghee to it.
• Once it gets hot add the marinated mutton to it.
• Cook the mutton on high flame till it gets roasted.
• And later cover it with a lid and cook it on a slow flame for half an hour.
• In a small take milk and mix saffron to it.
• Once the mutton is cooked add rice on top of it with saffron milk.
• After that, add a pinch of salt, fried onions, garam masala, mace powder, and ghee on the top.
• Mix them well and cover the lid with something heavy and cook it for half an hour on low flame.
• Your Lucknowi Mutton Biryani is ready to be served.
