Navratri is known to be a very auspicious occasion to get the blessings from the Hindu Goddess Maa Durga, as per the Hindu Culture. People keep fast for 9 continual days, and only consume fast specific food items, like fruits, Kuttu Atta, milk or curd etc. These dishes can be made even during regular days, most people prefer to eat them during fasts.
In this article, you will learn to cook an easy recipe for Rajgira Paratha, which is full of nutritional value and tastes delicious as well. Here are two ways to flatten the paratha, one is by rolling and the other is by patting on a cloth. Try to follow the instructions thoroughly.

PREPARATION TIME: 20 MINUTES
COOKING TIME: 20 MINUTES
SERVES: 2-3
INGREDIENTS: measuring cup, 1 cup = 250 ml
• ¾ cup of Rajigira Atta (Amaranth Flour)
• 2 medium Potatoes, boiled and peeled
• ½ teaspoon of Cumin Powder (Jeera Powder)
• 1-2 finely chopped Green Chilies
• Rock Salt (Sendha Namak), as per taste
• Oil or Ghee as per the requirement
HOW TO PREPARE:
Preparing the Dough:
1. Take the Rajgira Atta and pour it in a deep bowl.
2. Now, mesh the boiled and peeled potatoes and add them to the bowl.
3. Then, add green chilies, rock salt and cumin powder to it as well. Also, add grated ginger and fresh coriander leaves if you want to enhance the taste.
4. Now, mix them well and knead into a dough. Add water as per the consistency of the dough or else it will ruin it.

Method of Rolling:
1. First, make medium sized balls from the dough. Then, dust them with the Rajgira Atta.
2. Now place them on a flat surface and roll them into a round shaped paratha. Keep adding atta if it gets soggy.
3. Then, pull up the paratha with a spatula and put it on the heated tawa.
4. Now flip the paratha and pour a little amount of oil on it. Then, roast it well for 1-2 minutes and transfer on a plate and serve hot

Method of Patting:
1. Place a moist and clean kitchen towel or napkin on the flat surface.
2. Now take a medium sized ball of dough and place it on the kitchen cloth.
3. Then, using your fingers, pat the dough ball to flatten it into a round sphere of about 6-7 inches.
4. Now to remove the paratha from the cloth, either just pull it off or flip it on the tawa directly upside down.

Method of Roasting:
1. Now put a non-stick flat tawa on a medium heat and place the paratha on it.

2. Then, flip to the other side once one side is cooked, with the help of a spatula.
3. Now, pour a little amount of oil or ghee on it and flip again to roast the paratha well. keep it flipping to cook the Rajgira well and until it gets golden brown.
