Navratri Special- Samvat Pulao Recipe

Since the auspicious nine days of Navratri are starting from tomorrow I thought of sharing a Navratri special recipe. A lot of people fast during these nine days, but due to lack of fasting recipes they end up eating the same food over and over again. But not this time as I am going to share with you as many fasting recipes as possible during these nine days. So do check our page for new interesting fasting recipes everyday.

Today I am going to share with you the samvat pulao recipe. Hope you enjoy making and eating it.

Ingredients:

  • Sama ke chawal- 1 cup
  • Cumin seeds/jeera- 1 tsp.
  • Cinnamon stick- ½ inch
  • Green cardamom- 2
  • Cloves- 2-3 cloves
  • Whole black pepper- 3-4
  • Ginger- ½ inch (Crushed)
  • Green chilli- 1 (crushed)
  • Curry leaves- 8-10
  • Coriander leaves- 1 tbsp. (Chopped)
  • Peanuts- 2 tbsp.
  • Potato- 2, medium (peeled and cubed)
  • Cashews- 8-10
  • Ghee- 2 tbsp.
  • Water- 2 ½ to 3 cups
  • Sendha namak- as per taste
  • Lemon juice- as per taste (optional)

Procedure:

  1.  Rinse the rice in water a few times just the way you wash normal rice.
  2.  Soak the rice in water for 20-30 minutes.
  3.  Heat a pan and dry roast the peanuts until they are crunchy.
  4.  Transfer the peanuts to a grinder or mortar and pestle and grind them coarsely.
  5.  Heat ghee in a pressure cooker.
  6.  Now add the cumin, cloves, cinnamon, black pepper and cardamom.
  7.  Sauté until fragrant.
  8.  Add the crushed ginger and chilly. Sauté for around 30 seconds on a low flame.
  9.  Add the curry leaves, potato, coriander leaves and sauté for a few minutes.
  10.  Now add the crushed peanuts and stir.
  11.  Drain the excess water from the sama rice and add to the pressure cooker.
  12.  Sauté the rice for 2-3 minutes.
  13.  Add salt and water. Cook the rice for 4-5 whistles. By that time all the excess water would be absorbed.
  14.  Turn off the flame and let the pressure subside.
  15.  Open the lid and fluff up the pulao with a fork.
  16.  Serve the pulao hot with vegetable raita and a dollop of ghee.
