Paneer Stuffed Capsicum Recipe

Paneer stuffed capsicums is a fancy addition to your daily home cooking. Also, if you have kids at home who make all kinds of excuses when it comes to eating vegetables then also it is a great way to make them eat something healthy. You can make it as a main dish to have with parathas or chapatis or you can also serve it as an appetizer for parties.

So without wasting any time further let’s get started with the recipe.

Ingredients:

  • Capsicum- 4 (whole)
  • Paneer- 250 gm
  • Green peas- ½ cup (boiled)
  • Oil- 2-3 tbsp.
  • Fresh coriander- 2-3 tbsp. (finely chopped)
  • Cumin/jeera- ½ tsp.
  • Turmeric/haldi- ½ tsp.
  • Asafoetida/heeng- a pinch
  • Ground coriander/dhaniya powder- 1 tsp.
  • Ginger paste- ½ tsp.
  • Green chillies- 2 (finely chopped)
  • Red chilli powder- ¼ tsp.
  • Mango powder/amchur- ¼ tsp.
  • Salt to taste

Procedure:

  1.  Wash the capsicums thoroughly and snip off the crowns with the help of a knife. Keep the capsicums aside.
  2.  In a kadhai heat up the oil. Once the oil has heated up add the cumin seeds and the asafoetida. Let the cumin seeds get a little toasty.
  3.  Now add the green chilli and ginger paste and cook it for 30-40 seconds.
  4.  Add the turmeric, red chilli powder and coriander powder. Cook for another few seconds.
  5.  Now add the grated paneer and the boiled green peas. Mix everything really well. Now add the salt and mix again.
  6.  Cook the mixture for 4-5 minutes.
  7.  Lastly, add the dried mango powder and chopped fresh coriander to the paneer mixture. Mix well and turn off the flame.
  8.  Once the stuffing has cooled down a little bit, stuff all the capsicums with the paneer mixture.
  9.  In another kadhai, add some oil and turn on the flame. Place the capsicums in the kadhai so that the stuffing does not come out.
  10.  Cover the kadhai and cook the capsicums on a low flame. After 5-6 minutes check on the capsicums and turn them around so that the capsicums get cooked from all the sides. It may take around 20-25 minutes to get cooked thoroughly.
  11.  Once the capsicums are cooked from all the sides turn off the flame and serve the paneer stuffed capsicum with chapatis, paratha or as an appetizer.
