Pyaaz ki kachori is one of the most famous and beloved delicacies of Uttar Pradesh. You can find these on roadside stalls and on bigger sweet shops as well (in Uttar Pradesh sweet shops don’t just sell sweets). These are mostly served with a potato curry and at some places, it is served with savoury and sweet chutnies. But if you cannot go to U.P to try out these amazing kachories why not make them at home. Here is a step by step recipe of the same.

Ingredients:
- Onion- 3, large (chopped)
- All-purpose flour- 2 cups
- Ghee- ¼ cup
- Cumin seeds- 1 tsp.
- Asafoetida- a pinch
- Coriander seeds- 2 tsp. (crushed)
- Salt- as per taste
- Garlic- 5-6 cloves (Chopped)
- Ginger- 1-inch piece (finely chopped)
- Green chilli- 2-3 (finely chopped)
- Red chilli powder- 1 tsp.
- Fresh coriander leaves- 2 tbsp. (finely chopped)
- Oil- to deep fry
Procedure:
- Â Take the all-purpose flour in a big bowl. Add the salt and the remaining ghee to the flour. Mix all the ingredients really well. Now start adding water to the flour and prepare a stiff dough.
- Â Cover the dough with a damp kitchen towel and rest it for at least 15-20 minutes.
-  In a kadhai or pan heat 1 ½ tbsp. oil. Add the cumin seeds and asafoetida. Let the cumin seeds roast a bit and when they start changing the colour add the crushed coriander seeds. Sauté the spices for 30 seconds.
-  Now add the chopped onions and sauté the onions until light brown in colour.
- Â Add the chopped ginger, garlic, red chilli powder and the green chilli. Mix everything and cook for another minute.
- Â Turn off the flame, add the chopped coriander and transfer the onion mixture to a bowl. Set aside the onion mixture and let it cool down.
- Â Once the mixture has cooled down, divide the dough into 12 portions. Apply some oil on them and roll them into small puris. Place the onion mixture in the centre of the puri and bring the edges together and seal it. Pat the kachori lightly to flatten it, especially on the edges.
- Â Prepare all the kachoris in a similar manner.
- Â Heat oil in a kadhai for deep frying the kachoris. When the oil is medium hot, add 4-5 kachoris in the oil and cook them on medium flame until golden brown in colour.
- Â Remove on a paper towel to drain the excess oil.
- Â Serve the onion kachoris hot with coriander and tamarind chutney.
