Rabri is a sweet Indian delicacy, that is loved by most of the Indians and it is gaining its popularity among other nations as well. basically, Rabri is nothing special but the residue of the evaporated milk, that od cooked for hours and flavored by adding various dry fruits in it.
There are many ways to prepare a rabri like Mango rabri, Badaam rabri, Rose rabri and many more. You can even freeze the rabri, to give your little ones a summer cool popsicle. Also, rabri is known to be a perfect dessert to end the dinner party.

In this recipe, you will read about how you can cook a simple rabri dish at home, in just few simple steps.

INGREDIENTS:
• 2 liters of Full-Cream Milk
• 1 teaspoon of Green Cardamom (Chhoti Elaichi), powdered
• 4 drops of Rose Water
• ½ cup of Sugar
• 1 pinch of Saffron
• 100 grams of Khoya

HOW TO PREPARE:
1. First, take a deep and thick bottomed pan and pour milk in it. Bring it to boil on low flame.
2. Keep the milk boiling until it is reduced to half.
3. Meanwhile, finely grate the khoya and add it to the boiling milk. Keep stirring to avoid sticking it to the bottom of the pan. Make sure you grate the khoya finely to avoid forming lumps, or your rabri will be ruined.
4. Now, add the cardamom powder and the sugar into the pan and stir again. Keep the flame low and stir until the sugar is completely dissolved.
5. Until then, dissolve the saffron in one tablespoon of milk, and set aside the milk is completely cooked.
6. The, turn off the flame and allow the rabri to cool down.
7. Now add dissolved saffron and the rose water into the rabri and mix well.
8. You can also add chopped nuts of your own choice to enhance the flavor of the rabri and then refrigerate if for a while.
9. Serve it in fancy glasses, garnished with rose petals and chopped pistachios.
